Originating in Africa and Asia, these ancient plants have fed the world for thousands of years. In this tasting class, we’ll explore different kinds of gourds and their rich history, focusing on folklore, myth, culled cultural traditions, along with the impacts of colonialism. We’ll learn about the importance of growing buying heritage varieties of gourds, the different ways these plants are used and cooked, and how you can save seeds yourself. This is a tasting class, so we will serve 5-7 dishes that illuminate the history and diversity of gourds, including pumpkin talker from Trinidad and Tobago, spicy Korean cucumber salad, fattit ajar (Palestinian roasted baby watermelon), and Three Sisters Mash inspired by the foods of the Indigenous people of the Great Lakes region!
