For two nights, we’re hosting a seated, tasting-style dinner at Sobo.
The evening opens with a SUGOI Brewing Company BIRU 101 Rice Lager taster, paired with a hamachi opening bite — included when you order any ramen that night. The brewer will be present to share a bit about the beer and the pairing.
Alongside dinner, we’ll be serving a special appetizer menu, a curated ramen lineup, and a featured bowl that reflects a direction we’ve been exploring:
Clarified Tonkotsu w/ Botan Ebi (Japanese Sweet Shrimp) & Ankimo
This bowl takes the depth and structure of a traditional tonkotsu and presents it in a lighter, more precise expression — allowing delicate ingredients like botan ebi to lead rather than get buried. It’s not a departure from ramen, but an intentional interpretation of it.
For these evenings, our fast-casual space shifts into a sit-down experience, something we’ve been refining through these pairing nights. We ran a version of this in December — it met our expectations and taught us a lot — and this is the next step in that ongoing exploration.

For guests returning from our last tasting, we’ll be pouring a little Iichiko during the evening as a thank you.
