He’ll be behind the bar, introducing four cocktails that invite you to the world of cocktail chemistry and conscious consumption. Driven by the philosophy that alcohol is merely a component rather than the purpose of a great drink, Billy serves cocktails to tell stories, bring joy, and build community. Whether pushing flavor boundaries or creating inclusive spaces, he invites everyone—regardless of what’s in their glass—to enjoy an elevated, intentional experience.
