Clarity Series — Part II Sumi (澄) The Clarity Series continues with its second expression. Sumi — a clarified tonkotsu built around A5 Wagyu, focused on depth, restraint, and structure. The evening opens with a welcome pour from Hello Soju, and a paired appetizer bite served as part of the experience. For one night, our fast-casual space shifts into a seated rhythm — slower, quieter, intentional. Ramen, distilled. Details soon.
