Welcome to Unfiltered by Amy Racine, a series bringing together some of the most thoughtful voices in wine and beverage while spotlighting purpose-driven hospitality. Next up, we’re thrilled to welcome Liz Nicol, Founder & Head Brewer of Drawdown Brewing Company. An LGBTQ+ and woman-owned brewery in Boston’s Jamaica Plain neighborhood, Drawdown Brewing Company has quickly become known for its community-driven approach, hospitality-first ethos, and dedication to women’s sports. Under Liz’s leadership, the brewery earned Boston Magazine’s “Best Place to Watch Women’s Sports” in its very first year, along with recognition from both Boston Magazine and The Boston Globe’s “Best of” awards. Forbes also named Drawdown one of the women-owned breweries changing the craft beer industry. Before launching Drawdown, Liz spent over a decade as a civil engineer specializing in drainage and utility design while simultaneously building a passion for brewing through years of homebrewing. Inspired by the communal beer garden culture she experienced during a 2016 trip to Europe for the UEFA Euro Cup, she set out to create a brewery centered around connection, inclusivity, and approachable hospitality. Rather than chasing trends, Liz focused on technical, malt-forward beers rooted in balance and drinkability. Her engineering background continues to shape the brewery today, most notably through Drawdown’s “Tiger Team” philosophy — a multidisciplinary approach to building a team that is both diverse and excellent. In 2025, Liz was named VinePair’s “Next Wave” Brewer of the Year, recognizing her growing influence on the future of craft brewing and the culture surrounding it.
