Climate shapes whisky. This session shows how much. Balcones has long been defined by Texas heat—where higher temperatures accelerate maturation and push casks in a direction very different from Scotland or Kentucky. But rather than rely on theory, they set out to measure it. The result is one of the more ambitious aging experiments in modern whisky. Identical casks. Same spirit. Placed in radically different climates around the world. This session walks through that study—how it was designed, what changed across environments, and what those differences mean in the glass. Join us for a look into the scientific study Balcones conducted, carefully preparing and filling a set of painstakingly identical casks, placing them strategically in a wide range of locations around the world, and scientifically measuring - and tasting - their maturation over time. The results are outstanding, and the presentation is worthy of a NOVA documentary.
