In February it’s customary to take out ink and weep. In honor of that, I’m hosting a one-night pop-up dinner inspired by Boris Pasternak’s poem “February.” Here’s the first draft of the menu:
I SILENCE
Clear chicken broth with root vegetables
Whipped smoked butter with nori and black bread
II HEART
Beef heart tartare with nori toast
III INK
Squid ink risotto
IV TEARS
Salted fish with cabbage
Nordic-style cured fish · cabbage · fermented brine · apple
V THAW
Slow-braised pork shoulder glazed with black garlic
VI AFTERWORD
Smoked pear poached in red wine with vanilla ice cream
