House of Sobo Evenings — Clarity Series: Shiro Botan (白)
For two nights, we’re hosting the next House of Sobo Evenings — a seated dinner focused on one clear direction.
The night opens with a SUGOI Brewing BIRU 101 Rice Lager taster paired with a hamachi opening bite, included with any ramen order. The brewer will be present.
This edition features Shiro Botan from our Clarity Series:
a light clarified tonkotsu with botan ebi (Japanese sweet shrimp) and ankimo — an intentional interpretation of tonkotsu that lets delicate ingredients lead.
Alongside the featured bowl, we’ll offer a curated ramen lineup, a focused appetizer menu, and vegetarian options.
Returning guests from our last tasting will receive a small pour of Iichiko Shochu as a thank-you.
